The Brine: We begin with a patient dry-brining technique, utilizing coarse sea salt, cracked black pepper, and our savory house blend (featuring the classic depth of Lawry's). This ensures flavor penetrates deep beyond the surface.
The Rub: Before hitting the pits, each rack receives a generous dusting of our signature Memphis-style seasoning—an aromatic, complex balance of savory spices that develops a beautiful, caramelized bark.
The Smoke: They are slow-smoked over authentic hardwood until they reach absolute perfection. We aim for that elusive "perfect bite"—tender enough to pull cleanly away from the bone, but still possessing a satisfying, meaty texture, not mushy.
Planning Your Menu
A full rack of baby back ribs typically contains 12–13 bones. We recommend the following for planning your gathering:
As the Main Course: Plan on 1/3 to 1/2 a rack (approx. 4–6 bones) per person for a hearty, satisfying meal.
For a Tailgate Spread: If these are part of a larger buffet alongside other meats and sides, one rack will comfortably serve 4 to 6 people (approx. 2–3 bones each) as a grazing portion.
🔥 Larouex Pro-Tip: These ribs are delicious "dry" right out of the package, letting the Memphis rub shine. However, if you prefer a "wet" rib, brush them lightly with your favorite high-quality BBQ sauce during the last 15 minutes of reheating to create a sticky, irresistible glaze.

I ordered the pulled pork and the ribs for the 4th of July. The ribs were packed with meat and seasoned really well. The pulled port was moist and could be cut with a fork. We will be ordering from here again.
