The Persian Dining Room owes its existence to Margaret Elma Terrell, a trailblazer in institutional food service and education. At the time, Terrell was a professor at the University of Washington, specializing in home economics, dietetics, and institutional management. She envisioned a space where students could gain hands-on experience managing a commercial restaurant while applying their academic training.
Convincing the university’s board of regents to support her idea, Terrell established Terrell Dining Services, which operated the Persian Dining Room inside the Northern Life Tower. This innovative approach allowed students to work in a real-world setting, learning everything from menu planning to large-scale food preparation.
