The Beef: We start exclusively with Certified Angus Beef® brisket, hand-selected for its rich marbling and ideal fat cap.
The Cure: We honor tradition with a proprietary pickling spice brine—a bold blend of coriander, mustard seed, black peppercorn, bay leaf, and pink curing salt—submerging each brisket for a full 7-day wet cure to ensure deep, complex flavor penetration down to the last fiber.
The Smoke: Here's where we break from the boiling pot and make it ours. After a cold-water soak to balance the brine, we smoke at a consistent 235°F for 8–10 hours using aged post oak with a kiss of mesquite for that distinct, savory finish that no deli counter can touch.
The Finish: Once the "stall" kicks in, we wrap in traditional pink butcher paper. This crucial step guarantees a gorgeous mahogany bark, locks in intense moisture, and delivers that melt-in-your-mouth, velvety texture no other technique can match.
