Holiday Christmas 2025 - Smoked Prime Rib Roast

We start with a Prime Angus Rib Roast and smoke with a very low temperature in our smoker. We then chill it, tie it and vacuum seal it up.
INCLUDES: Himalayan Salt (for Cooking), Jacobson Finishing Salt, Creamy Horseradish Sauce, 1 Bottle of 410 Steak Sauce and 1 Bottle of Pink Pig BBQ Sauce!
Planning your Meal
The 18lb Roast
These roasts after smoking and your cooking will weight between 14.5lbs and 16lbs. We always strive to give you the best weight, the price is based on the 18lb weight.
The 10lb Roast
These roasts after smoking and your cooking will weight between 7.5lbs and 9lbs. We always strive to give you the best weight, the price is based on the 10lb weight.
When planning how many people the roast can feed, remember that what we do in infuse the smoke into the meat and we pull it from the smoker around 95-100 degrees and chill it in an ice bath. You will be cooking it at home and we recommend that you do high heat to sear and then turn down the oven to 300-325 and let it cook slowly. This insures that the rib heats slowly and has a more even temperature throughout. You should assume some loss when you cook it and this will be around 15%. If your Prime was 18lb, assume around 2.5lbs of weight loss.
Assume that each person will be 6-8 ounces with all of the other traditional fixings for the holiday. If you are planning on the Prime Rib being a centerpiece, assume 10 ounces per person and real Prime Rib lovers can eat a pound!
The 18lb Roast
- 17-24 Servings per person as part of the whole holiday meal
- 14-18 Servings per person for a centerpiece meal.
The 10lb Roast
- 10-12 Servings per person as part of the whole holiday meal
- 12-14 Servings per person for a centerpiece meal.
You will get more with careful carving!
To Prepare...
- Heat the oven to 500.
- Rip two pieces of foil that is big enough to cover the bottom of the Prime Rib.
- Put the Prime Rib fat side up in the middle of the foil.
- Put on a pan that catches any fat if the foil breaks.
- Cover the Prime Rib with the awesome salt we provided.
- Let the Prime Rib "sear" in the oven for 20-30 minutes. Be careful, if things start smoking make sure that the heating elements on the oven are not too close.
- Lower the oven to 300.
- It will take a couple hours or so to heat up. Use a thermometer and you want to get to 120-125 degrees Fahrenheit in the first 1/3 and 1/2. The ends will be more well done.
- Pull the rib and place it on the counter, cover with foil and let rest for 20-30 minutes before you carve.
PICKUP: Pickup at our Casa, located in South Seattle and instructions for pickup on December 18th-19th, 2025 (between 9am-5pm) and will be emailed to you. You can set your date with us after the pickup date that is convenient for you!
